Mario Haller has been producing high quality fruit brandies for years – at first just for friends and acquaintances, but now for an expanding circle of connoisseurs who value his consistency. He procures the fruit by hand, choosing untreated trees from farms in the region – and only when the fruit meets his requirements in full is it selected for alcoholic fermentation. In the event that nature is unkind, there will be no distillate in that year.
To ensure each fruit brandy achieves its full taste potential, we spent a great deal of time experimenting with various alcohol percentages. The result was three different fruit brandies of varying strength. To enable buyers to distinguish between them visually, and not just by taste, the three bottles have appropriate designs, with sandpaper labels indicating the corresponding levels of alcoholic content of the distillate. These range from the mild plum at 41% to the strong cherry variety at 58%.
Fruit Brandies made in the tradition of our grandfathers. Fruits are allow to ripen naturally, with no pesticides involved, and none of the trees in the local area is artificially fertilised. Every pear is carefully picked by hand – an approach that produced the Vintage Edition, which is produced using untreated, ‘fortunate’ fruits.
